Happy Happy

Today is my mom's birthday which means that she deserves a special shout out! Happy Birthday Mom! I'm so so thankful that she is my mom because I couldn't have hoped for a better mom. She has always put her family before her wants (even when it comes to shopping with Sis and me.) She has always put God and family first which is and will forever be an amazing role model! Speaking of, she and dad left early this morning for a mission trip out of the country and won't be returning until next week. Anyway, I hope its a great birthday!

Apple Cranberry Crisp

Remember when Hubs and I went apple picking/ Well, we are still overflowing with apples! We've been so busy that I haven't had time to bake anything (or been in town long enough to eat that something.) Even though Hubs is yet again out of town again this whole week, I managed to make something with those apples. Last night was the first night of our new girl's Bible study. Its with some of the girls that I've met since moving up here. I'm so excited to see what its going to look like and grow into. However, back to the apples. I was looking up anything and everything that would use up lots of apples and I found it! None other than on the Whole Foods iphone app. Ha Well, it was simple and I already ad all the ingredients which made it the winner. I think it is tart enough and light enough to be eaten for breakfast but if you want it for dessert then I would suggest adding some ice cream to sweeten it up a bit. Here's the recipe...

Ingredients:
3-4 large red apples (peeled and chopped)
1 cup fresh or frozen cranberries
1/2 cup apple juice
1 1/2 tsp all purpose flour
1 1/2 tsp pumpkin pie spice (although I think you can make your own version if you don't have any on hand - obviously this is what I did since I was too lazy to run to the store)
2 cups granola (I used pumpkin granola)

Directions:
Preheat oven to 350. Combine apples and cranberries in a 8 or 9 inch square baking dish.
In small bowl whisk together apple juice, flour and pumpkin spice. Pour over fruit. Sprinkle the granola evenly over the top and lightly press down. Bake until bubbly and hot - 40-45 minutes. Enjoy!

Wedding Part 2

So yesterday I shared pictures of the lead up of the wedding so today here are just a couple of pictures on the actual day. Unfortunately, when I looked through all the pictures from the wedding I didn't have that many good ones. But the last picture shows just how in-love the newly married couple is.
Also, I was fortunate enough to be asked by the bride (my sis-in-law) to make the bridesmaid's necklaces. Sis-in-law found the crosses on the necklaces at a flea market when she was 17. Almost 10 years later, she still had the crosses and it ended up that the number of crosses was the same number as bridesmaids. How about that?! So she sent me the crosses and I made each a bit different. Its a cool story, huh?!

Wedding Part 1

I'm back from last week/weekend's wedding festivities down in Florida! I'm not sure where to start so I think I'll just show some snippets throughout the 4 days we were down in Seaside, FL. We had a great time celebrating Hubs' little sister's wedding (aka my sis-in-law.) We couldn't have asked for better weather, food and company. But of course, pictures say it better than me...

All the bridesmaids rode everywhere on bikes
Just a couple of chairs in the ocean - no big deal
My cute parents
As always - Hubs getting buried in the sand by the kiddos
There were tons of these little guys crawling around
Doesn't this make you want to take a vacation?!?
